PURPLE TOMATILLO SALSA
I love salsa and salsa goes with everything… when I went to the store I saw an older lady picking up what looks like purple tomatoes! My curiosity took over and I asked her “what is that?? What do you make with those?” She answered without lifting her head … “those are tomatillos they are purple not green and I make salsa with it.”
I know I can’t leave the store without them to try to make my own salsa…
How is it made ??? It’s so simple!!

BOIKOS ROLLS BALKAN
Almost every house back hone makes those easy fast rolls in this or that version. They are so easy to make and you will get so many compliments. They look like you slaved the whole day making them, yet they are fast and quick to make.

Matbukah
We all end up with few tomatoes in the back of the refrigerator.
We planned to do so many things with them but somehow they end up at the end of the shelf getting older and older… now this dish is for you.
So what is Matbukha? Matbukha is a North African dish it’s a type of cooked salsa or chutney! It’s great to serve in a small dish as an appetizer with hummus and pita!

GREEK ORZO SALAD

Dress to impress!!! You know the famous saying .. well this salad is a crowd pleaser and a great way to impress just about everyone while it’s so easy, quick and make ahead dish!!
I have to give the credit to this recipe to my good friend Nandini. Nandini and I meet through our children. When my daughter was about 2 we went to mommy and me classes to what I Nick named “hippy school” there was Nandni with her little boy. Quick hi turn to more deep conversations, to birthday invites to long friendship of few years now.While our kids little older and moved on to different directions we stayed friends. My connection with Nandni is the kind that we might not see each other for long time but will pick up from were we left. I call her my soul sister.
When her boy was younger we were invited to his birthday and there.. behold I come across the Orzo salad. What I love about the orzo salad is that it’s one-stop Trader Joe! All the ingredients can be found in Trader Joe!.. shall we start? -

INDIAN SHORTBREAD COOKIES NAN KHATAIZ

Nan-Khatai are staple cookies in every Indian house! They are must, those are shortbread cookies with Indian twist. Most Indian desserts are cooked on stove top but those are the only one that I know off that are baked! They are rich with butter and a great treat that come in small doses. Easy to make and the reward is even better. The nan-khatai are among the first cookies that I learn to bake, you can’t fail baking them. The biggest tip for those cookies is that the color of the cookies should be very pale and they look as if not baked but trust me you don’t want to over bake them.

CHALLAH BREAD
This is water based challah that contains no eggs.. she’s more fluffy and one slice is not enough!
So what is so special about challah? Well if you didn’t grow in Israel probably not much, but to me.. she’s the best why? She’s the shape and has the flavors of my hometown, and my childhood.
I lived in the United States for more than 20 years and I have searched high and low for the challah recipe I grew up with and behold!! After 20 years I have finally found and perfected the recipe for it!
Growing up and still back home.. every Thursday and Friday all the groceries get the challah for Shabbat. Every neighborhood have little grocery store with the basic groceries which we call it Makolet they have limited of dairy, cleaning products groceries.. kind of “last minute run out of something “ so we can just walk for the little mom and paps little store
Every house hold gets those challah usually 2-3 and one we save for dinner service and also for lunch .. they are best to dank in the fish stew that a lot of North Africa countries like Morocco or shakshuka.. even with thin layer of chocolate spread.. ahhh so sinful yet so good!
The key to getting a high loaf is to “tuck” it in a smaller loaf pan!

BRAZILIAN BRIGADERIOS
Brigadeiros are a chocolatey sweet dessert or treat that originated in Brazil 🇧🇷
A brigadeiro is generally shaped into small balls covered in chocolate sprinkles and placed in a small cupcake liner.

A little history of this little ball of heaven! The origin of the name “Brigadeiro” is linked to the presidential campaign of Brigadier Eduardo Gomes, UDN candidate for the Presidency of the Republic in 1946.
Heloísa Nabuco de Oliveira, a member of a traditional carioca family who supported the brigadier’s candidacy, created a new confection and named it after the candidate. The doce de brigadeiro (lit. brigadier’s sweet) became popular, and the name was eventually shortened to just “brigadeiro.”
Women at the time would sell brigadeiro in support of the presidential candidate as it was the first national election in which women were able to vote.
Brigadeiros are now a popular confection throughout the country, especially for festive events. They are commonly made at home, found in bakeries and in snack shops. A brigaderios is commonly served as a round ball rolled in chocolate sprinkles, but the chocolate mixture may also be poured into a small container, and eaten with a spoon, and this is known as a brigadeiro de colher (literally, “spoon brigadeiro”).
Now all I need is a visit to a good Brazilian cafe and I’m set!! Until then, I’m making these treats at home to enjoy.

EGG CHALLAH
When Covid started, my search for challah become somewhat frustrating. At one store the bread looked really bad and in the other, they were so good but only available in limited quantities. I decided that I’m putting end to the madness. F*$# looking for challah every Friday and hoping they are not all gone!
I searched high and I searched low … behold I found the recipe and started baking every week. The more I baked the better results I got.
Traditionally in our home egg challah was usually only bought on high holidays and special occasions. It is considered the queen of all bread.
The texture is a little more cake-like because of the eggs! It is amazing to use the next day for French Toast.
Yeast dough requires a little attention but once you start baking with yeast you can’t stop and the possibilities are endless. You can make it sweet or savory.
This recipe was originally given to me by a friend in one of the mommy and me classes that I took with my daughter at the temple. The recipe is very special to me because my daughter and I both learned how to bake it together. So bring your children in and bake a loaf of bread with them and create some fun, and lasting memories!
